Braised Turkey Leg with Barley

Christmas Day 2025 at Casa Adora — solo, but with full ceremonial pomp, as I put it to my sister at the time. A turkey leg, slow-braised in the oven with barley, carrots and leeks until the meat fell from the bone and the barley soaked up every bit of the stock. Proper British nationalism on a Spanish terrace, medicinal Bucks Fizz included.

Ingredients for braised turkey leg recipe

  • 1 turkey leg
  • Paprika
  • Dried thyme
  • Garlic, sliced or crushed
  • 2 bay leaves
  • Carrots, chopped
  • Leeks, sliced
  • 100g pearl barley
  • Chicken or vegetable stock
  • Splash of dry white wine
  • Olive oil
  • Salt and black pepper

Method:

  1. Preheat the oven to around 160–170°C fan for a slow braise.
  2. Rub the turkey leg with olive oil, paprika, dried thyme, salt and pepper.
  3. In a heavy casserole or roasting dish, brown the turkey leg on the hob in a little oil until golden on all sides. Remove and set aside.
  4. In the same dish, soften the carrots and leeks for a few minutes. Add the garlic and bay leaves.
  5. Stir in the barley, then return the turkey leg to the dish, nestling it among the vegetables.
  6. Add enough stock to come most of the way up the turkey leg, with a splash of white wine.
  7. Cover tightly (lid or foil) and braise in the oven for around 2–2½ hours, until the meat is falling off the bone and the barley is tender, topping up with a little more stock if it looks dry.
  8. Serve the turkey leg over the barley and vegetables, spooned over with the braising liquid.
