Vegetables, fruit and pulses don't always get top billing — but these vegetable, fruit and pulses recipes carry plenty of their own flavour, colour and comfort. This is where you'll find them: stuffed peppers and roasted tomato tarts, bean salads and chickpea bowls, a cauliflower dressed up a few different ways, and the odd tagine bringing it all together.

Some of these lean naturally vegetarian, a few could go vegan with barely a tweak — cooked at Casa Adora and on the road, using whatever the market or the garden happens to offer that week. Whether it's a stuffed pepper for one or a big pot of tagine to share, there's something here worth putting on the table.
