Paprika Roast Chicken with Fennel, Potatoes & Wilted Spinach
A proper weekend feast. Smoky paprika rub, roasted fennel and potatoes catching all the juices, wilted spinach to finish. Impressive with very little fuss.

Herbed Faux-tisserie Roast Chicken All the flavour of a rotisserie chicken without the rotisserie. A herbed butter rub, regular turning, and patience — the results are genuinely impressive.

No-Water Slow Cooker Chicken with Apple and Red Onion A whole chicken cooked with nothing but apple, onion and its own juices, no added water. Soy, hoisin and fermented garlic ginger paste give it a savoury depth, finished with a flame gun for proper colour.

POUSSIN

Poussin — a young chicken of around 400–500g — is one of the most rewarding birds you can roast. It cooks faster than a full-sized chicken, portions perfectly for one, and takes on flavour beautifully. These three recipes form a natural cluster — from a simple spatchcock to a rich Pedro Ximénez glaze.

Roast Spatchcock Poussin Backbone removed, flattened, rubbed with paprika, garlic powder and olive oil, and roasted at 200°C for 35 minutes. Crispy skin, tender meat, on the table in under forty minutes. Mid-February at Casa Adora, clear skies and warm for the time of year.

Garlic Stuffed Poussin with Tomato Sauce Butter-rubbed, cavity stuffed with as many garlic cloves as it will hold, roasted, then smothered in homemade tomato sauce for a final ten minutes. Two from Mercadona — job done.

Roast Poussin with Orange & Pedro Ximénez Sherry The most indulgent of the three. A whole bird roasted on a bed of aromatics, finished with orange zest, fresh orange juice, and a generous glug of PX. The pan is deglazed to produce a rich, syrupy sauce. First cooked in a tiny IKEA kitchen in Córdoba province.

Nigel Slater's Roast Chicken Wings with Lemon and Black Pepper Six ingredients, one roasting tin, 40 minutes. Roasted until golden and sticky with edges blackened here and there. Nigel Slater calls it finger food at its very best — hard to argue.

Slow Cooker Garlic Parmesan Chicken Wings Browned first on the hob, then slow cooked on low for 4–6 hours until tender. The sauce — built around Nearly Nando's Lemon Herb Peri Peri Sauce, garlic, butter and Parmesan — is reduced and thickened on the stovetop before tossing the wings at the end.

Fish Sauce Chicken Wings with Chilli & Pineapple Corn-fed alitas marinated in fish sauce, pimentón picante, sherry vinegar, and tinned pineapple juice, with Tropical Sunset fermented habanero chilli sauce doing the heavy lifting on heat. Sticky, smoky, and genuinely addictive.

Mango Habanero Chicken Wings with Chilli & Pineapple Whole wings marinated in homemade mango chutney, blended tinned pineapple, and Tropical Sunset fermented habanero chilli sauce, then roasted in the outside electric oven at Casa Adora until sticky and caramelised. Served over romaine leaves. Fruity, smoky, and genuinely hot.
